Earlier this week, we had dinner with our friends Carla and Iron Mark. They were telling us how, while on vacation in the mountains, they had fixed pizza on the grill.
This idea intrigued me for a few reasons, but, most notably, because my husband is obsessed with pizza. Seriously, during one of our first phone conversations we were trying to decide where to go for dinner, and he said something along the lines of, “Well, pizza is like my favorite food EVER.” He also went on to tell me that he could “eat pizza for every meal” (I thought that this was an exaggeration, but, it turns out it was not. Danny is also blessed with the ability to eat the same thing over and over and over again and never get sick of it).
At any rate, pizza is one of my go-to things to fix at home. It is pretty cheap and I can customize my pie with whatever veggies I want – and, Danny loves it.
I did not really have a plan when setting out to make grilled pizza. I looked on the internet and jotted down a few directions…

…I have no shame in admitting that I totally used bottled pizza sauce. We spent a lot of money on frivolous electronic purchases this weekend and are going low budget this week. Honestly, this sauce got pretty watery on the grill and I will probably not buy it again – but, it served the purpose for tonight.
Vegetables and cheese all cut up and ready for assembly. The tomatoes and basil came from my backyard garden. I used fresh mozzarella, which made me feel a sophisticated (until I realized that I had everything laid out on a monkey plate and any notions of sophistication flew out the window).
His (on the left) and her’s pizza – I committed a major faux pas and forgot to get pepperoni for Danny’s pizza. He said it was alright, but, I still felt kind of bad – he is usually strictly a pepperoni and mushroom guy.
The verdict? These were pretty tasty. I don’t know if I would made them this way super often – but, there was something about the way the crust grilled up that was very appealing. Plus we didn’t have to use the oven, which, in the summer is always a plus. Two thumbs up for grilled pizza!
