Incompatible Dining

When it comes to our food preferences, Danny and I could not be any more different.  I consider myself to be about 75% vegetarian.  I eat meat, but, am very picky about it.  Danny, on the other hand, refers to himself as a “meat-a-tarian” and I affectionately refer to him as “meat-o.”  He would never consider eating breakfast or lunch without including some kind of meat.   This kind of sucks when it comes to cooking dinner.  He does not cook…and I do, but only moderately well.  I am far too lazy to usually consider making two “nice” meals.  So, we eat out a lot.  And, if we’re eating in, more times than not, it is usually just sandwiches.

We have been trying to cut back on eating out so much lately.  Between the wedding/party/honeymoon we have been hemorraging money.  Tonight I decided that I wanted to make some Mexican stuffed peppers for myself.  Luckily, I was able to combine this into a chicken fajita dinner for Danny.  I used to make fajitas ALL the time and kind of got burned out on them.  This was the first time i’ve ever successfully thrown things into a dish and had it come out edible.

The peppers actually roasted up fairly well under the broiler.  I CANNOT wait until we have a house and I can start cooking peppers on the grill.

Then I cut up some squash/zucchinis/onions and let them hang out on my very adult monkey plate.  I later sauteed these with some olive oil and beer.

The rest of the toppings all got thrown into a bowl with the veggies – brown rice/black beans/monterey jack cheese and some tomatillo salsa.  Yummy!

Ready to eat!  A perfectly wonderful dinner with no meat.  Danny doesn’t know what he is missing.

I think you should just start calling Danny “MeatWad” after the little meatball on ATHF. Dont know what that is? I shall bring you videos! Peppers look nummy btw and where did you get that monkey plate!!! i want one!
