We ate some really outstanding meals in Anguilla (Picante, Tasty’s, etc.), but, I would be remiss if I didn’t give a special shoutout to the dinner that we had at The Straw Hat.
I don’t have a picture, because I was way to involved in eating – but, if you ever find yourself in Anguilla, make sure to hit this place up. I had the warm goat cheese salad to start and then the special of the evening, which was fresh caught Wahoo on a bed of sweet potato risotto and wilted spinach. It was so good that I nearly licked my plate clean.
Anyhow, our last few days on the island involved a lot of eating, hanging out at the beach bar with Sam, spa treatments (hot stone massage = heaven) and, of course, relaxing on the beach.
All week, this swim platform had been calling my name. Due to the fact that I spent most of the week being a lazy blob, I hadn’t yet swam out to it. The weather/water was perfect our last day and I decided that it was time to go for a swim (albeit a very short one). I handed the waterproof camera to Danny and told him to make sure that he took my picture once I got out to the platform.
…annnnnd this is what I wound up with. Oh well, he gets points for trying at least. Once I got out there, I hung out for a bit, captivated by the insane water color.
Danny eventually decided to join me (and brought out the waterproof camera). I spent the better part of our time on the platform trying to negotiate a plan that involved us not leaving the next day.
Unfortunately, I was unable to convince my super responsible husband that we should send for Gracie and stay in Anguilla permanently. What a buzzkill. We swam back to the shore, spent a few more minutes on the beach and then headed back to the room to pack up our belongings and get ready for the trip home.
The biggest bummer about leaving Anguilla was that the weather was absolutely perfect the day of our departure. Knowing that it was cold/rainy/blah back in North Carolina didn’t make leaving easy. I kept wandering out on the balcony of our room as we waited for the bellman to come for our luggage. Eventually Danny told me to stop because I was making him dizzy with all the walking back and forth.
Just as the dreaded knock on our door came, I pulled out my phone and took one last picture…
…and with that it was time to head home.
Even though we have been back for nearly a week, I am still suffering from an awful case of vacation hangover. Hopefully we will be able to get back to Anguilla soon – but, for now, I suppose that I need to suck it up and be grateful that we had the opportunity to go back to this wonderful country for a second time.
