Gracie woke us up at promptly 7:30 AM this morning. This is after she woke us up at 1:30 AM with a bit of an emergency that required me to take her outside immediately. So, so glad that she knows to let us know when she needs to go outside – but, I was still dragging today because of the late night fun.
At any rate – had my usual bowl of oatmeal this morning. It was good.
For lunch today, Danny requested that we go to K38. A few quick words about K38 – to say that my husband loves this restaurant would be a bit of an understatement. If he had his way, we would probably eat 3 meals a week here. He is also blessed with the ability to never get sick of ANY food – so, he gets the same thing every single time he goes. At any rate, I knew that they have a lot of decent vegetarian options on their menu, so, I agreed. Before our meal arrived, we ate a bunch of (blurry) chips. The salsa at K38 is pretty much the best in town.
For my main course, I had the vegetarian Tower 7 burrito. I have had this many times before – it is huge and I ate about half of it and brought the rest of it home.
After a trip to Halyburton Park to walk Gracie (and meet up with someone off of Craigslist) – we headed home where I crashed hard around 4:30pm. I have been so tired all week, and I finally told Danny that I was going to take a nap for a bit. Fastforward to 6:30 and I wake up and realize that I have been out cold for about 2 hours. Oh well – I guess my body needed the sleep.
Dinner was quick. I did not feel like fixing anything, but, wasn’t in the mood to go to out for another sit down meal. So, we ran over to Jimmy John’s and picked up sandwiches. I have the vegetarian sub and added dijon mustard and oil/vinegar to it. It was really good – I was totally excited to find out that it had an avocado spread on it!
And that concludes my week long experiment of going meat-less. I might extend it by a day, just because I have a lot of leftovers in the fridge that need to get eaten, but, we’ll see.
Time to run and get ready for the Duke/Clemson game. After the loss on Wednesday night to State, I am hopefully that Duke can come out with a road victory. It is going to be tough though – Littlejohn is a super tough place to play and Clemson is going to be pissed since my boys laid the smack down on them a few weeks ago at Cameron. I have already warned Danny that there might very well be some alcohol in my future tonight. Go Duke!
