If nothing else, this experiment has really made me think about what I am eating. We have some stuff going on this evening – and, if I were not trying to eat vegetarian, I would totally just be like, “Hey, let’s just go grab something while we are out.” But, since I am trying to go meat-less (and be more money conscious), I spent some time at work today taking mental inventory of what we have to eat at the house, and what will fit into my vegetarian plans.
Breakfast this morning was something new – a scrambled egg sandwiche with a slice of cheddar cheese.
I am not the biggest fan of eggs. I eat them sometimes, but, it is kind of rare. They do give me a nice little boost of protein though, and since I have been SO hungry the past few days, I figured that maybe I should try something new for breakfast. This sandwich actually hit the spot and kept me full through my 11AM workout with my trainer. I probably will not make a habit of eating this for breakfast, but, it did work out well this morning.
I really had no clue what I was going to do for lunch today. I didn’t bring anything from home – and I was not really sure what was available in the “corporate cafeteria” (my parents house). To my surprise, I found some sort of veggie minestrone soup that my mom had made a few days ago. I had a huge cup of that and decided to have half of a pimento cheese sandwich for good measure.
Dinner was basically leftover veggies from last night’s dinner paired with a salad and some Annie’s Organic Mac & Cheese that I randomly picked up at the grocery store awhile back. I was too lazy to go get the D300 from the office, hence the crappy iPhone photo.
Danny ate the rest of my pizza from the other night (after I picked off the tomatoes and added more “appropriate” toppings per his request). I am glad that he ate that because I had no interest in revisiting that meal and there was SO much leftover. Yay for not be wasteful!
I am now pretty much out of food at the house and have no clue how the next two days are going to go with this challenge. On the upside, I do have a ton of mac & cheese leftover, so maybe I can stretch that into something for lunch one day over the weekend.
For now I am just looking forward to spending some time on my sofa – so, so glad that tomorrow is Friday!
