I am not going to lie – I am starting to lose steam with this vegetarian thing. I think it is mostly because I am SO tired (which, honestly, probably less to do with no meat and more to do with not sleeping super great/less caffeine).
I had my normal bowl of oatmeal for breakfast this AM. I did not take a picture of it because:
- I am lazy
- I was in a hurry
- I have eaten the same thing all week and see no need to be redundant
Lunch today was kind of a cheat. I know that I said that I might be eating seafood at some point this week – but, it still felt kind of like cheating when I had a cup of seafood chowder that my mom brought home from Michael’s Seafood.
This stuff is seriously good – and I was super hungry. Oh well.
I also had an avocado sandwich with cheese, lettuce and tomato. Here’s the thing – I LOVE avocados. I could probably eat two a day (or more) if given the option – I love guacamole, avocado sandwiches, avocado drizzled with lemon juice … I could really keep going. These veggie sandwiches are really no big stretch for me to eat because I literally eat them ALL. THE. TIME.
No time for an afternoon snack today (my parents found a renter for the condo and I had to meet my Dad over there to load up the rest of the random items that were still there). Plus the whole work thing – which totally gets in the way of, well, everything.
Dinner was a mix of veggies. My plate had a sweet potato, brown rice, blackeyed peas, steamed broccoli and a dinner roll (thrown in for good measure). I pretty much demolished this entire plate as soon as I sat down.

This meal also marked the return of my husband. During lunch today I ran to the grocery store and picked up a few pieces of rotisserie chicken for his dinner. The only way I am going to make it through the rest of this experiment is by planning ahead – and that was an easy solution to what he should have for dinner. My plate just substituted the sweet potato and peas for his chicken.
Speaking of Danny – Gracie was so excited when I told her that her daddy was on the way home that she did this for 10 minutes:
She was also whining and pawing at the door. It was very cute. Of course, as soon as Danny walked in the door she jumped on him, gave him a few kisses and then started barking and biting at him.
And now I am off to hang out on the sofa for an evening of basketball watching. Duke does not tip off until 9pm tonight and I am seriously dragging. I will make it though – once game time gets here I will be ready to go! In the meantime I think that I will go watch Wake (hopefully) dominate UNC.
