Day 3 is in the books. My breakfast consisted of the same thing that I have had for probably the past 2 months.
My oatmeal with almond butter has more staying power than other stuff – so, I figure why change things up this week.
Lunch was a repeat of Sunday’s dinner. I finally polished off the last of my vegetarian lasagna. This stuff was so easy to make and SO good! I will definitely be making this again. I also had a salad to go with my lasagna.
Around 3pm I was absolutely starving. Luckily, I came to work prepared and threw together a quick granola/yogurt combination. This is a snack that I started eating over the summer and it is awesome. It is even better when fresh fruit is throw in, but, alas I had none of that today.
Dinner was something different. I found a recipe for Chipotle Bean Burritos in my mom’s Cooking Light magazine this month, and decided to give this a go in the kitchen (recipe here).
In the interest of full disclosure, veggie burritos are one of my go-to quick meal items. I think that I started making these when I was a poor college student, but, I usually just throw black beans into a wrap with toppings. This recipe, while easy, required a bit more effort and definitely had a few more layers of flavor. These turned out pretty good – was it worth the effort of preparing things different? Maybe on occasion, but not all the time. It was a really cheap meal though and I am a big fan of that! I was starving by the time dinner rolled around and actually ate the pictured wrap as well as half of another. I will probably be eating these again for lunch as I have a ton of stuffing left over.
This monkey has been my little shadow all week. I think that she is scared to let me out of her sight – she does not like it when one of her parents is missing.
She is currently laying beside me in the office trying to help me put together a new workout playlist on the iPod. Even though her daddy would say otherwise, she is a big fan of Justin Timberlake, Ludacris and Outkast. Haha.
