Vegetarian Experiment – Day 2

I successfully completed day 2 of the experiment.  I unexpectedly got pulled out of the office for most of the morning and early afternoon, which meant that I had to get lunch out.  Not really a big deal, but, as it turns out, when you are trying to make a conscious effort to avoid meat, it is really hard to find something appealing on the menu at a restaurant.

At any rate – breakfast consisted of my regular bowl of oatmeal with a scoop of almond butter.

DSC_0744Almond butter is a pretty recent discovery of mine.  I actually think that I like the taste and consistency more than regular peanut butter – but it is super expensive.  I really only use it in my oatmeal or on an english muffin, otherwise, I stick to regular ‘ole peanut butter.

Lunch was at Giorgio’s – a local restaurant that I think is now officially off of my list of places to dine.  This will make Danny very sad, because he LOVES their chicken parm – but the service there was really horrible at lunch and honestly, if I am going to go get Italian, I would rather go to Taste of Italy.  It is just as good and requires a lot less drama to get in and out of.

I ordered a cup of soup and a greek salad for lunch – but, the waiter apparently thought that I did not need the soup and I never got it.  I might would have requested it if he had actually come back to our table before dropping off the check.  Oh well.  My salad was decent but had WAY to much feta on it.

Dinner was a pizza that I bought yesterday at Costco.  Pizza is Danny’s most favorite food and normally I would never eat it without him.  I hate to “use up” my pizza dinners when is not around.  But, I have had my eye on this particular pizza that Costco offers for awhile and figured that since it had none of the boys “required” ingredients, maybe this would be a good week to try it.

DSC_0748The verdict on this?  Meh.  It was alright, but, it had WAY too much cheese on it and now my stomach kind of feels a little off.  Even after I ate my serving, there was a ton left over and I have no clue if I will actually be able to motivate myself to spend the rest of the week polishing it off.  Next time I will just grab a “take and bake” pizza from Harris Teeter  or call in an order to the Mellow Mushroom.  Both are better alternatives.

Tomorrow should be interesting because I have my first strength training session since this experiment started.  I have been extra tired this evening, but, I tend to think that has less to do with my eating habits and more to do with staying up too late to watch basketball.  I guess tomorrow will let me know for sure.

And now I have a dog to go play with and cheesy movies to watch (I totally got some stuff from Netflix that I would be too embarrassed to let Danny see me watch!)  more later…

You should just make your own pizza. Its way fun and then you can put all kinds of fresh veg on there. I likes spinach and maters an onions on mine! om nom nom. I have a recipie for pizza dough if you want.

I have tried to make my own dough before and totally fail at it. Maybe if I ever buy myself one of those nifty stand mixer things I will try it again. l have started buying the Harris Teeter “take and bake” pizzas for Danny and I – I just buy a plain cheese one and then add his stuff to 3/4’s of it and put spinach/tomatoes/banana peppers/red peppers on my 2 slices.
