Vegetarian Experiment – Day 1

Over the past few months, I have been kicking around the idea of trying to go totally vegetarian for a week.  Honestly, I do not eat a ton of meat anyhow – and, I just really want to see if I was capable of going an entire week being totally vegetarian.  I chose this particular week because Danny is out of town for a few days and while I am challenging myself to do this – there is pretty much no way in hell that I would ever expect him to go even a meal without eating meat anyhow.  This way, I am not trying to prepare two different meals (at least for a few nights).

At any rate, Day One of the experiment is in the books – and it went just fine.  In preparation for this, I made myself a veggie lasagna a few days ago and had that ready for leftovers tonight.  Along with the salad I fixed, it was actually a pretty delicious meal.

(Note: I am trying to take pictures of my meals so that when I look back on my experiment in a few weeks, I will actually remember what I fixed – however I did not get the bright idea to do this until dinner tonight.)

Lunch consisted of a hummus sandwich with roasted red peppers, avocado, tomatoes and lettuce.  Breakfast was a bowl of oatmeal with some almond butter mixed in for protein.

Originally I was going to swear off seafood as well.  But, now I think that I might allow myself to eat that at least once or twice during the week.  Since I lift weights on Tuesdays and Thursdays, I am a little concerned about how not eating as much protein might affect my energy level.  I might left myself eat an egg for breakfast one morning as well.  I in no way intend for this to become a lifestyle change, but, it is a way for me to make myself try a few of these recipes that I have bookmarked from my mom’s Cooking Light magazines and try a few new things.

If it goes well, maybe I will give it another go in the summer once I have access to all of the yummy fresh veggies at the Supermarket.  We’ll see – baby steps.

And now I need to go spent some quality time with Gracie before the Duke/WFU game tips off.  She has been so good all day, but now she is whining and antsy.  I think she misses her daddy and hopefully if we play for a few minutes she will settle back down so that I can enjoy the game.
